Toffee Squares

My favorite person I’ve never met is Ree Drummond, also known as The Pioneer Women.  Anytime I need a sure enough good recipe and am hankering to try something new I head over to her blog and am never disappointed!  So this last weekend I needed a fast, easy dessert to take to a lake party.  And I wanted to try something new, enter Cleta Bailey’s Toffee Squares!

I doubled the recipe so I could easily make 2 variations.

You whip up the cookie batter and spread it out on a cookie sheet and bake it.  This can be done in less than 20 minutes!

You finish the cookie with chocolate and as many topping as you can possibly fit onto a full-sheet cookie.  Gently press them in to make sure they don’t get lost.  If they do get lost and wander onto the countertop, feel free to eat them.

The first one I did as Ree suggested and used toasted pecans and toffee candy bits.

The second one I went a little wild with and used white chocolate, chopped macadamia nuts and craisins!  You have to watch me, I’m crazy like that.

And they were both a huge hit at the party!

One side note, I was having a hard time getting the chocolate to melt enough to spread without burning it so I ended up microwaving the morsels according to the directions on the package and then spreading them onto the hot cookie.

It worked beautifully.
